Chicken with Herbs, filled with sun-dried tomatoes and mozzarella cheese

In case you are looking for a unique Mediterranean diet culinary recipe for your Christmas table, which is based around chicken and has basic Mediterranean ingredients then you will love this recipe that is prepared around the Mediterranean culinary tastes.

Chicken Breast Cheese

In this Mediterranean diet recipe will we use Mediterranean herbs, the well known Italian white cheese, Mozzarella cheese, and other Mediterranean diet basic components such as olive oil, eggs, milk and the healthy sun dried tomatoes.

This recipe is for 4-6 people and the whole process takes about 60 minutes for preparation and 40 minutes to cook.

The Ingredients:

4 chicken fillets about 2 lbs in total weight
1 cup of ground breadcrumbs
2 eggs lightly beat in 2 Tbsp of milk
1 Tbsp of dried oregano
1 cup of flour
1 tsp of dried basil
½ tsp garlic powder
8 pieces of sun dried tomato cut in thin stripes
1 Mozzarella cheese ball, drained and sliced
4 large sweet potatoes
2 tbsp of olive oil
1 Tbsp fine cut fresh basil leaves
1 tbsp of thyme
1tsp of salt
1tsp of pepper


Open the chicken fillets by slicing then through the middle, the same way you open a bread bun and then you beat them lightly so that they would become thinner. (For ease of execution you put them in a plastic bag and then you beat them. This way the chicken does not break and spreads easier.)

You put the salt and pepper on the chicken fillets and in the middle of each fillet you put 2 slices of mozzarella cheese, and you evenly spread the sun dried tomatoes and then you wrap them tightly in rolls. You put them in the refrigerator to tighten up and become one mass.

Preheat the oven to 360 degrees Fahrenheit. Put in a deep plate the flour, in another one the beaten eggs and in a third one the breadcrumbs that are mixed with all the herbs, oregano, basil, garlic and thyme. Take the rolls of chicken out of the refrigerator and pass them by rolling them in the plates with the flour, the eggs and finally the third plate with the herbs. You then place them in pan which is greased with olive oil. You cook for 40 minutes, turning just once in the middle of the 40 minutes.

Prepare of the sweet potatoes.

While the chicken is being cooked you can prepare the sweet potatoes. Sweet potatoes can be cooked either in steam or by boiling them with their skin in lightly salted water for about 20-30 minutes or until they are soft. (You can use a fork to check their softness). Once cooked you drain them and you cut them in elongated stripes. Before they are served you warm some olive oil and you put it on top of them


You cut the chicken in rings and you serve them with sweet potatoes garnished with the fresh basil.
