Halloumi Cheese is the product of Cyprus which belongs to the white cheese category and it is part of the Mediterranean diet, to be consumed daily and in combination with other dairy products, twice a day.
Halloumi cheese is the only cheese that can be cooked and eaten in many ways, raw, grilled, fried, boiled, or baked. It can be combined with many dishes easily and be eaten as part of breakfast, lunch or dinner.
This recipe, Halloumi cheese with vegetables and lemon-basil dressing, is a healthy food that can be eaten for lunch or as a light dinner after a healthy exercise.
Grilled Halloumi with Vegetables and dressing from Basil and Lemon
The Ingredients for the dish
1lb of Spinach leafs
1lb of red peppers cut in thick slices
1lb of marinated artichokes cut in half
18 Tbs of Green Olives
9 mushrooms
2 ozs of Cypriot Halloumi cheese cut in thick slices
Ingredients for the dressing
18 tsps of fresh lemon juice
9 tsps of virgin olive oil
9 tsps of finely cut fresh basil
The Execution Method
Grill the red pepper slices till they are cooked to your desire.
Remove the red peppers from the grill and put the mushrooms
Put in a large ball the spinach, the red peppers, the artichokes, Olives and some Olive oil.
In a small bowl or Tupper that closes on top, put the lemon juice, olive oil and basil, cover the bowl with the lid and shake well.
Remove the mushrooms when they are soft enough and their water has been evaporated and wrap them with aluminium foil so that they would stay warm.
Put the Halloumi cheese on the grill and cook it, till it has softened enough.
Put on top of the large bowl, that has the spinach and the other vegetables, the Halloumi and mushrooms pour the dressing on top of all and your delicious food is ready to be enjoyed with 8 other friends (the above recipe is for 9 portions).
It combines well with a light white or red wine.
