Italian Fish Soup

We are in the middle of winter and we are looking for ways to stay warm, healthy and fit. For those who follow the Mediterranean diet this is easy. The Mediterranean culinary cuisine offers so many recipes that can satisfy any taste or desire.

The Italian fish soup is a dish that everybody can enjoy, stay healthy and warm and at the same time follow the guidelines of the Mediterranean diet. The fish component in the Mediterranean diet has been explained in a previous post and the Mediterranean diet pyramid clearly indicates the importance and position of fish in the Med diet.

This, well known, Mediterranean recipe that is provided below is for 4-6 servings and takes about 30 minutes to be prepared.

The Ingredients:

3 lbs of a variety of fish and shrimp and mussels
2 glasses of white dry wine
½ lemon
4 tsp butter
1 medium-size onion
1 carrot
1 celery stick
1 garlic clove
2 tsp of finely cut parsley
2 large red tomatoes
1 tsp of tomato puree
3 tsp of olive oil
Salt and pepper

Execution

Finely cut the onion, celery, carrot, garlic keep till needed.

Peel and finely cut the tomatoes.

Put the fish, but not the other seafood, in a casserole together with wine, 3 cups of water and the finely cut vegetables, onion, celery, carrot, tomatoes, and garlic. You boil for about 10 minutes. Drain and keep the broth. Remove the bones from the fish and clean the casserole.

Heat the butter and olive oil in the cleaned casserole and then throw in the mixture of fish and the other seafood, shrimps and mussels, and stir for about 2-3 minutes until the mussels open. Throw in the broth and add the tomato puree. Let everything boil for 5-6 minutes. Add pepper and salt as desired to meet your taste. The Mediterranean fish soup is ready for consumption.

This healthy Italian-Mediterranean culinary food can be enjoyed, either as a light lunch or dinner. Soups are the protagonists among the winter light foods and they keep us warm and healthy during the long winter days/nights.
