Recipes Crispy Greens with Figs and Halloumi Cheese

Halloumi Cheese is the product of Cyprus which belongs to the white cheese category and it is part of the Mediterranean diet. It can be consumed daily and in combination with other dairy products it can be eaten twice a day.

The salad that will be presented to you is a healthy food that can be eaten for lunch or as a light dinner after a healthy exercise. The following recipe is for 4 servings.

Crispy Greens with Figs and Halloumi Cheese

The Ingredients for the Salad

1 Romaine Lettuce

1 bunch of rocket

0.4 oz of fresh mint leaves

8 cherry tomatoes

8 figs (you can use fresh when in season or dried)

2 radishes

0.3 lbs of Halloumi cheese

1.3 oz of olive oil

Ingredients for the dressing

4 Oz of virgin olive oil

1.3 Oz of red wine vinegar

0.5 Oz of honey

0.1 Oz of mustard

Salt and Pepper

The Execution Method

●      Wash all vegetables and drain well. Gently fry Halloumi in the olive oil until golden and drain well on kitchen paper

●      Mix olive oil, vinegar, honey and mustard and adjust seasoning.

●      Break the lettuce and rocket leaves into bite size pieces with your hands. Cut the cherry tomatoes in half, carefully slice the radish. Peel the fig, if fresh. Cut the figs if fresh into quarters and if dried into small pieces.

●      In a large bowl mix all ingredients together with the dressing.

Since the Mediterranean diet allows for moderate consumption of wine, this salad combines well with a light fresh white wine.
