Moroccan Chicken with Couscous

Chicken is part of the Mediterranean diet and can taken once a week while Couscous as part of the base of the Mediterranean pyramid can be taken on a daily basis. The Moroccans have found a perfect way to combine the two, chicken and Couscous, in the recipe that will be described below, enabling the followers of the healthy Mediterranean diet to enjoy a delicious Mediterranean food for lunch or dinner.

This recipe is for 4 persons.

Ingredients for Chicken

0.8 ounces of butter – or olive oil (depending on taste desires)
2 tsps of grounded cumin
2 tsps of grounded dry coriander
1 cup of sweet paprika
8 pieces of chicken
1 cup of chicken broth
8 Tbs of Green Olives cut in half
4 tsps of lemon zest
4 tsps of white (peeled) almonds
4 tsps of fresh coriander leafs
Ingredients for Couscous
1 cup of chicken broth
1 cup of water
3.5 oz of butter cut in small pieces
1.5 cup of Couscous

Preparation Method for Chicken

Cook the chicken on the grill to your liking.
When the chicken is cooked put the butter in a pot and put on slow fire.
As soon as the butter has melted put the spices, coriander, paprika, cumin, in the pot.
You let them boil for while and then you add the chicken and the chicken broth and let is cook slowly for about 5-6 minutes.
Add the olives, the lemon and almonds and let all of them cook well on a slow fire till they blend and the juice thickens.
Preparation Method for the Couscous
Put the chicken broth and water in a pot and let them boil.
As soon as they boil add half of the butter.
As soon as the butter melts, pour the liquid mixture in a bowl and throw the Couscous in.
You let it soak for about 3-4 minutes until the Couscous absorbs all the water and softens up.
Add the rest of the butter and mix with a fork.

Serve the food by putting the couscous in a shallow platter, adding the chicken on top and garnishing the food with the fresh coriander
