Valentine’s Day with Fettuccini Carbonara

On Valentine’s Day, if you are looking to reach the heart of your love, reach it through his/her stomach with a great Italian food, Fettuccini Carbonara. The proposed dish is part of the Mediterranean diet and as pasta it can be consumed daily but on this special day you need this special and tasty dish that you and your other half will love.

Ingredients

1 package of Fettuccine (500g or about 1.1lbs)
8-10 slices of Italian pancetta
2 Tbs of Olive Oil
3 eggs
3 Tbs of Fresh milk cream
1 cup of grated parmesan cheese
Parsley
Salt
Pepper

The Execution Method

Cut the Pancetta in small cubes

Boil the Fettuccine in a large pot with a lot of water. In the water add salt and 1 Tbs of Olive oil so that the fettuccine will not stick to each other. Once cooked to your liking, remove from fire and drain.

In large deep frying pan add olive oil and heat it for a while. In the pan fry the pancetta until it has the light pink color.

While the pancetta is being fried, break the eggs in a bowl, add the fresh cream and beat until they blend and become fluffy.

When pancetta is ready, add the hot and drained fettuccini in the pan and mix well with the use of wooden spoons.

Afterwards add slowly-slowly, while stirring, the eggs and remove the pan from the fire. Removing ensures that the eggs do not get cooked so that they would turn to be an omelette rather than a thick and rich sauce.

You put the pasta in a serving porcelain pot, sprinkling them with salt, pepper and ½ a cup of the grated parmesan cheese. The parmesan will slightly melt and bond with the fettuccini. At the time of serving add the other ½ a cup of parmesan cheese and the chopped parsley.

It serves 2 hungry and in love persons.
