Mediterranean Diet in Ukraine

The Mediterranean diet, way of living and mode of food preparation and consumption, is spreading all over the world and every day becomes more famous among different nations which do not belong to the Mediterranean communities and Ukraine could be not an exception. The global society is extremely concerned about the general health condition of the people and endeavors to improve this situation. For this purpose, the Mediterranean diet is the best remedy, because it is a combination and an extract of the most favorable components for our organism, body and mind.

The Ukrainian diet is in great contrast with the Mediterranean one. The Ukrainian food is rather ‘’substantial’’ and heavy to the stomach. It contains a great deal of fat, carbohydrates, cholesterol. This is explained with the way of living of the older generations, mainly due the way of living of the Ukrainian ancestors, and the climatic harsh and cold conditions. Ukrainian diet consists of a lot of meat such as sausage, known as kovbasa, chicken and pork, which are eaten many times in a week. Specifically pork is considered to the national meat of Ukraine and Pork fat is often used in cooking in place of oil. Pork is mostly fried which makes it even more unhealthy. Ukrainian people eat a lot of soups and the well known soup, borscht, is made of cabbage, beets and mushrooms or meat. Chicken is cooked in various ways with the most and well known the chicken Kiev. So as it comes out the Mediterranean diet pyramid is practically inverted to form the Ukrainian diet.

Nowadays that everything is changing, the modern way of life, makes people be more cautious with the products they eat and the mode they prepare them. People are more health oriented. The most appropriate solution to meet all the requirements is to follow the Mediterranean pattern. The medical researches proved that people from the countries washed by the Mediterranean Sea have less cardiac diseases and respectively have lower rate of obesity. Consequently all the progressive Ukrainians who take care of their health and want to be active and recharged with the energy long enough during the day and life tend to follow the Mediterranean diet.

The market always responds to the society’s demand that’s why the Ukrainian restaurant sector is quickly enlarged with new restaurants offering all the variety of the Mediterranean dishes. The owners of the respected and fashionable restaurants send their Chefs to the Mediterranean countries for them to absorb all the skills, knowledge and traditions of making and serving food originated there. Unfortunately the restaurant culture is not widely spread in Ukraine due to the prevailing financial conditions in the country. However Ukrainians are very smart and skillful people, so they easily learn and incorporate the Mediterranean way of making food in their way of living. Women after visiting this sort of restaurants try to recreate at home the dishes they tried; afterwards they treat their friends and share recipes. The truth is that the changes in our life are taking place slowly, however the dietary change takes place at a faster pace. So it is in Ukraine, the number of people who substitute butter or mayonnaise sauce with olive oil, pork with fish and enrich their diet with fresh vegetables and fruit increases at a faster pace than anything else in Ukraine.

The conclusion is that Mediterranean diet is capturing the hearts of the Ukrainian people and especially that of the nice looking Ukrainian women.
