Watermelon is a summer fruit and it part of the Mediterranean diet.
The nutritional properties of watermelon are well known to all and they are described in a previous article. There are many ways to eat and enjoy watermelon. It can eaten as a fruit, as part of a nice refreshing salad, as breakfast with the Cypriot Halloumi and in some countries grilled!
One way to enjoy is by making a Watermelon Gazpacho!
Gazpacho is Mediterranean food. It is a Spanish tomato based-soup appetizer that is served cold. It is part of the Spanish cuisine and thus the Mediterranean cuisine.
In this recipe, Gazpacho is produced from watermelon, still keeping the red color of Gazpacho and at the same time providing and refreshing summer cold soup and something more.
Ingredients
2.2 lbs of watermelon
½ teacup of red wine vinegar
½ teacup of fresh chopped mint
Salt and pepper
Execution
Remove the seeds from the watermelon and puree the watermelon. Add the red wine vinegar, the mint and then salt and pepper to add taste to it. Put everything in a blender and blend for half a minute.
Serve in chilled bowls and enjoy it.
Alcoholic Variation:
If you want to transform the Gazpacho appetizer to a nice long summer drink you may can prepare the Gazpacho without the vinegar and then add a shot of vodka for every glass of watermelon Gazapacho in a long glass. Alternatively you may mix the juice with sparkling wine in 50-50 ratio. Both drinks are excellent and refreshing for the summer hot evening
