Minestrone Soup

In the Mediterranean diet, culinary soup recipes are at their peak during the cold winter period since this kind of Mediterranean foods keep the people warm. Minestrone soup is part of the Italian cuisine which in its turn is part of the Mediterranean culinary cuisine.

The recipe that is provided is for 6 servings but you may deem necessary to prepare greater dosage and keep in the refrigerator and boil as and when needed.

The Ingredients

1 cup of beans (soaked from the previous night)
2 medium sized finely cut onions
2 tbsp olive oil
2 cloves of graded garlic
3 bacon strips cut in small pieces
1 tin of finely cut tomatoes
3 tbsp finely cut parsley
9 cups of beef broth
¼ cup red dry wine
1 carrot cut in cubes
1 turnip cut in cubes
2 potatoes cut in cubes
2 zucchini cut in pieces
½ cup peas
½ cup of small pasta pieces (shells or star shaped)
Salt and pepper
Freshly grated parmesan cheese for topping

Execution

Drain the beans and afterwards put them in a casserole and cover them with cold water. Put the casserole on fire and when they, beans, reach to boiling state, lower the fire, keep the fire low for 15 minutes and then remove them from the fire and drain them.

Heat the olive oil in a casserole and sauté in low fire the onion, bacon, and garlic till tender and pink in color.
Put the tomatoes in the casserole, then the parsley, the beans, the beef broth and the wine and cover the casserole. Cook on low fire for 1.5-2 hours until the beans are soft. Add the carrot, turnip, and potatoes and cove again the casserole, cooking slowly for another 20 minutes.

Finally, put in the casserole the zucchini, peas and pasta pieces, letting the whole mixture to boil for another 15 minutes until pasta is soft. Use salt and pepper accordingly.

Serve the soup with the parmesan cheese on top and/or with some pesto if you like.
